Baked Banana Oatmeal

Ingredients

  • 2 bananas, smashed
  • 2 eggs
  • 1 cup of milk
  • 1 cup of oatmeal
  • 2 tbsp brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 cup chopped pecans (optional)

Instructions

Preheat oven to 350 degrees.

In a bowl, smash 2 bananas. I wouldn’t use completely brown bananas but it will be sweeter if you use bananas that have started to turn brown.

To the same bowl, add the remaining ingredients and mix well.

Once combined pour into a greased baking dish and bake at 350 degrees for 30-45 minutes or until firm in the middle.

Makes 4-6 servings.
