Blueberry-Banana Baked Oatmeal Muffins


  • 2 bananas
  • 2 eggs
  • 1 cup of milk
  • 1 cup of oatmeal
  • 2 tbsp brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • Fresh or frozen blueberries


Preheat oven to 350 degrees.

In a bowl, smash 2 bananas. I wouldn’t use completely brown bananas but it will be sweeter if you use bananas that have started to turn brown.

To the same bowl, add 2 eggs, 1 cup of milk, 1 cup of oatmeal, 2 tbsp brown sugar, 1 teaspoon cinnamon, and 1 teaspoon vanilla.

Mix well.

Place 12 muffin liners in to a muffin tin.

Divide the batter evenly amongst the muffins.

Top with blueberries. I usually do 5-6 per muffin but I’ll let you decide how much to add.

Bake at 350 degrees for 20-30 minutes.

Makes about 12 muffins.

These store great in the freezer.
