Ingredients

- 24 biscuits, baked
- 24 eggs
- 24 slices of fully cooked bacon or ham
- 24 slices of American cheese
- 1 12oz bag of frozen chopped spinach
- 1/2 medium yellow onion, finely diced
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp garlic
- Paper towels
- Press & seal
Instructions
Before you start. Your eggs and biscuits need to be cooked on the same size sheet pan. So, if you do not have two of the same sized sheet pans you will want to bake your biscuits. Take them off the sheet pan, let it cool and then bake your eggs on that same sheet pan.
On a large sheet pan lined with parchment paper place 24 biscuits and bake per the instructions.



After baking let the biscuits cool completely.



You can use the frozen biscuits, the biscuits in a can, or biscuits from scratch.
Finely dice 1/2 of a medium yellow onion.
In a large mixing bowl add your diced onion, 1 12oz bag of frozen chopped spinach, 24 eggs, 1 tablespoon of salt, 1 tablespoon of pepper and 1 tablespoon of garlic powder.
Mix well.
Dump onto a large greased sheet pan.



Bake at 350 degrees for 20-30 minutes.
Let eggs cool completely.
Cut int to 24 equal squares.
Once the eggs and biscuits are cooked and cooled it is time to assemble your sandwiches.
Before assembling you will want to prep your wrapping ingredients.
You will need 24 paper towels dampened with 1 cup of water.
You can choose to skip this step, however, I will tell you that they heat up in the microwave much better if you don’t.
Stack your paper towels on a plate.
Dump 1/2 cup of water over 1 side of the stack of paper towels.
Flip the stack of paper towels over.
Dump the other 1/2 cup of water over the second side of the paper towels.
I strongly suggest using Press & Seal wrap but if you don’t have that you can use saran wrap.
If you are using Press & Seal you can pull off 24 square pieces of Press & Seal wrap.
If you are using saran wrap you will want to pull these off as you need them because they will stick together and you will get frustrated.
Lay out 1 piece of Press & Seal.
Lay 1 damp paper towel in the center of the piece of Press & Seal.
Cut 1 biscuit in half, sandwich style.
Put the bottom half in the middle of the paper towel.
Put down 1 piece of egg
Put down 1 piece of ham or two 1/2 pieces of bacon.
Put down 1 slice of American cheese
Top with the other half of your biscuit.
Wrap the paper towel around your sandwich.
Wrap the Press & Seal around the sandwich and paper towel.
Repeat this assembly process 23 more times.
Once you have all of your sandwiches assembled you will want to put these in a some kind of container. I usually put them in freezer Ziplock bags. You can fit 9 sandwiches into 1 bag. However, if you have a large food storage container that will work too.
Makes 24 sandwiches.
Whenever you go to heat these up you just throw the whole thing in the microwave, including the Press & Seal.
I’m not going to give you a time, because that will be determined by the strength of your microwave.
I’d suggest starting with 1.5 minutes and microwaving it for an additional 30 seconds until it gets to the desired temperature.
Remove the wrapping and enjoy!
