Reuben Nachos

Ingredients

  • 4-6 medium potatoes, finely sliced
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp garlic
  • 3 cups corned beef, chopped
  • 1 cup sauerkraut
  • 4 oz swiss cheese (sliced or shredded)

Instructions

Finely slice 4-6 medium potatoes like chips. Enough to cover the bottom of a sheet pan well.

Coat potatoes in 1/4 cup of olive oil.

Season potatoes with 1 teaspoon salt and 1 teaspoon garlic powder.

Spread seasoned potatoes evenly on a greased sheet pan.

Place in a 400 degree oven a bake until they start to get crispy on the top, probably about 20 minutes.

While you’re waiting, chop up 3 cups of corned beef.

Once the potatoes start to get crispy pull them out.

Spread your corned beef evenly over the top of the potatoes.

Spread 1 cup of sauerkraut evenly over the top of the corned beef.

Spread 4 oz of swiss cheese over the top of the sauerkraut.

Place sheet pan back into the 400 degree oven for another 20 minutes until the cheese is nice and melted.

Top with thousand island dressing, if desired.

Serves 4-5.
