Refreshing Cucumber Sandwiches


  • 1 loaf of sliced bread, I’d recommend either rye or white
  • 1 English cucumber, finely diced
  • 4 oz package of cream cheese, soft
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1 tsp dried dill weed
  • 1 scallion, VERY finely chopped


Chop 1 scallion as finely as possible.

Finely dice 1 English cucumber.

In a bowl combine 4 oz of softened cream cheese, 1/4 cup mayonnaise, 1 tbsp lemon juice, 1/2 tsp garlic powder, 1 tsp dried dill weed, chopped scallion, and diced cucumber.

Combine well.

Lay out 10 slices of bread.

Divide the mixture evenly amongst the 10 slices of bread.

Spread the mixture over each piece of bread.

Top the 10 sandwiches with a second piece of bread.

Cut off the crusts, because their cuter that way and your dogs need a snack.

Cut the sandwich into two little triangles because that’s classy.

This makes 20 little finger sandwiches. I’d say that probably serves about 20.
