Veggie Heavy Guacamole


  • 3 avocados
  • 1/2 medium red onion
  • 2 Roma tomatoes
  • 1 yellow bell pepper
  • 3 cloves of garlic or 1 1/2 tsp of garlic powder
  • Juice of 1 lime
  • Cilantro, um… all of it
  • Salt


Finely chop 1/2 medium red onion, 2 roma tomatoes, and 1 yellow bell pepper.

Mince 3 cloves of garlic.

I am not going to tell you how to live your life. If you don’t like cilantro, that is fine, you can leave it out. But if you do want it, and I most certainly do, you’ll want to finely chop some of that. However much you’d like.

In a bowl smash 3 avocados.

To the same bowl add your diced vegetables, minced garlic, chopped cilantro and the juice of 1 lime.

Mix well.

Taste it.

Salt it to taste.

You can eat this immediately, however, I will tell you this tastes a little better if it’s sat in the refrigerator for at least an hour so the flavors have some time to develop.

Serves 6? Or maybe just 1?
