Creole Sausage and Rice


  • 1 lb smoked sausage
  • 1/2 medium yellow onion
  • 3 cloves of garlic
  • 1 jalapeno
  • 6 mushrooms
  • 2 large tomatoes
  • 2 cups of cooked rice
  • 2 tbsp creole seasoning
  • 2 tbsp olive oil


Slice 1 pound of smoked sausage.

Add sausage to a large frying pan.

Dice 1/2 of a medium yellow onion.

Add onion to the frying pan.

Mince 3 cloves of garlic.

Add garlic to the frying pan.

Slice 6 mushrooms.

Add mushrooms to the frying pan.

Finely dice 1 jalapeno.

Add jalapeno to the frying pan.

To the frying pan, add 2 tablespoons of olive oil and two tablespoons of creole seasoning.

Place pan on the stove over medium low heat.

Cook until vegetables are soft and the sausage is browned.

Dice 2 large tomatoes.

Once the vegetables are soft and the sausage is browned, add the diced tomatoes and 2 cups of cooked rice to the pan.

Mix well.

Let cook on low heat for 1 minute.

Mix again.

Serves 4.
