Ingredients

- 4 boneless, skinless chicken thighs
- 1 egg
- 1/4 cup almond flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Instructions
Put 4 boneless, skinless chicken thighs in the food processor.
Pulse until it’s the consistency of ground meat.
Once you’ve reached the proper consistency dump your processed meat into a mixing bowl
To that bowl add 1 egg, 1/4 cup almond flour, 1/2 tsp of salt, pepper and garlic powder each.
Mix well.
Once mixed well form meatballs.
You should be able to get 12-15 meatballs.
Put meatballs in a baking dish and cover with 1 cup of buffalo sauce.



Bake at 350 for 15-20 minutes.
I like to make sure the sauce is really on the meatballs so I’ll take them out and give them a good stir.
Then I’ll throw them back into the oven for 1-2 minutes on broil.



Serves 4-5.
These meatballs are super easy and can be eaten for lunch dinner or even served as an appetizer.
